Strawberry Sorbet... Yum!

Since Summer is almost here, I've been craving anything fruit related lately.  I bought my first watermelon about a month ago and I've been doing so every week since.  This past week I found a great deal on strawberries at my local market, and even though I'm allergic to them (headaches and sometimes hives), I bought some anyway.  I love them and will just take a super regimen of antihistamines until the urge for strawberries passes and I move on to the next fruit.

It is almost 90 degrees today so I decided it was time to break out my ice cream maker and put it to work!

This was the result:



 Strawberry Sorbet

 What you will need:
  • 1 lb of fresh strawberries, rinsed and hulled
  • 3/4 cup of sugar
  • 1 teaspoon of fresh squeezed lemon juice
  • 1/8 teaspoon of salt

 












Slice the strawberries and toss them in a medium bowl with the sugar.














Stir until the sugar starts to dissolve.  Cover and let stand in the fridge for about an hour, taking it out and stirring every so often.

Puree the strawberries and the liquid along with the lemon juice and salt in a food processor or blender until it is smooth.  You can press the mixture through a strainer or sieve to remove the seeds, but I didn't bother.  It would make it much smoother, but I kind of like the natural texture.














Put the mix in the fridge again to make sure it is good and chilled.  Once chilled, mix it in your freezer per the manufacturers instructions.  I have a cuisinart ice cream maker and it takes about 20 to 30 minutes to get to the point I like to put it in a freezer safe bowl or enjoy immediately!
